Expeditious Kölsch

5 gallon extract

6 lbs Pilsen LME

1 oz Perle 7.8% AA (20 min.)
1 oz Tettnanger 3.9% AA (20 min.)

Wyeast 2565 Kölsch

Pitched: 5/17/14 SG 1.044
Secondary: 5/27/14 SG 1.012
Kegged: 6/4/14 SG 1.012

Notes: This is the first time I've tried one of the Northern Brewer 20-minute boil kits, which seemed unusually compatible with the demands of trying to wrangle two children on the weekend; I might stay traditional for something more complex but this sounded ideal for a light beer intended as a summer refresher. It got off to a very swift start, bubbling away merrily barely twelve hours after I pitched the yeast.
