1 lb flaked oats (steeped for 30 min.)

6.6. lbs Pilsen LME
1 lb wheat DME (last 15 minutes)
2 lbs Pilsen light DME (last 15 minutes)

1 oz Azacco (at flameout)
1 oz Ekuanot (at flameout)
1 oz Citra (at flameout)
1 oz Mosaic (at flameout)

1 oz Ekuanot @12.5% AA (1st dry hop, 7/30/2021)

Notes: this had a stronger starting gravity, and looks like it's a little stronger on the hop front (due to variations in the AA values of the hops harvest), so we'll see how it turns out.

Not for the first time, we didn't go through a darker beer very quickly -- thinking we should brew IPA/single-hop pale ale type beers more or less exclusively for on-tap service given how the other styles linger in the keg.

Cider Weekend 2017

Transferred 5 gallon for Gareth to keg

Transferred 5 Gallons for Russ to carboy and pitched the Mother for apple cider vinegar.

Made 18 gallon from Sunnycroft, Winnie's, and Gass fields.

     5 for Gareth pitched with White Labs English Cider Yeast.
          1/14/2018  Transferred cider to secondary
               2.5 gallons mixed with 1 pound honey, 1 ground orange peel, 3 T ginger, 1/2 t amylase, 1/2 package of rasberries.
               2.5 gallons left plain.
          6/4/2018  Bottled,  primed with total of 3.8 oz of dextrose split between both 2.5 gallon batches.


     5 for Mark pitched with Safcider.

Unseasonably warm with temps in mid 70's.  Hornets all over, Gareth was stung twice.

Sunnycroft apples very diseased with apple maggot fly.

Notes: I went light on the salt compared to some of the recipes and will adjust as needed for the secondary/keg phases. The fermentation was very vigorous -- foam coming out the fermentation lock after 24 hours.

British Bitter

Notes: A very slow start, with barely any action after 48 hours, but then steady fermentation for over a week -- never incredibly vigorous but with regular CO2 bubbling.

Something went wrong along the way with this beer, and it developed a very strong "off" taste like iodine, that did not go away -- indeed it seemed to become stronger in the keg. I ended up getting rid of the entire batch.

Notes: I was up at dawn on July 4th to get this one going, with the aim of ensuring that we could actually drink some of it during the eponymous season. By 10:30 a.m. the yeast was pitched, and bubbled very nicely for a full week before starting to taper off.

Notes: This is the first time I've tried one of the Northern Brewer 20-minute boil kits, which seemed unusually compatible with the demands of trying to wrangle two children on the weekend; I might stay traditional for something more complex but this sounded ideal for a light beer intended as a summer refresher. It got off to a very swift start, bubbling away merrily barely twelve hours after I pitched the yeast.

Notes: I dry-hopped for twice the recommended 5-7 days as we were travelling, and while this makes the beer pretty hop-forward it doesn't seem to have over-bittered it at all. Indeed, it's amazingly drinkable stuff, and remarkably clear. One of the best beers I've made -- definitely a repeat in 2015.

Pitched: 11/14/2013 OG 1.080 @ ~68F

Notes: I fermented the primary in the cellar at a temperature of 52-58F depending on the day. There was very vigorous initial action and then solid bubbling for another week or so. The secondary is in the garage at a temperature fairly close to the air temperature, but clad in a sleeping bag for some extra insulation. The liquid is hovering around 40F.
