Ale or Lager ?
I was going to make a 10 gallons of lager but only had one lager yeast. I am not sure this recipe would fit lager style anyway, probably too hoppy.

McLaughlin Ale
I discovered the demands of being an award winning brewer when asked to contract brew for McLaughlin Garden and Homesteads' two most prestigious events, Garden Illuminated and The Auction. The mission was to brew something that everyone would like and that would also make them feel generous. I had ingredients for brewing a Czech Pilsner and a Black IPA so with some minor adjustments I came up with the following brews:

One of the beers we brought back from the great Gaspe road trip of 2008, though I think you can get this in the states. Orange color with plenty of tiny bubbles. Lighter in alchohol and body than many other Unibroue beers that I've had. Light smokey taste, but I'd have a hard time saying this is whiskey inspired.
Very drinkable for a Unibroue, but still has that distinct taste.

Chambly Noire

Style: Black Ale

Chambly Noire is exactly that: it comes out of the bottle black, with an excellent foamy coffee-colored head; the head died back very fast, though. In the glass, the beer is completely opaque, like a dark stout. It has an extremely fruity aroma, with grape and prune especially noticeable. The flavor also has hints of grape, as well as a spicy maltiness. The beer had a vigorously carbonated feel in the mouth, and a slight but very pleasing sour quality.
We drank it as a dessert beer paired with some gingerbread, and the spiciness complemented the food well. At 6.2%, it's also considerably less potent than some other dessert choices (stouts aside) and as such extremely drinkable.
